Fats, Oils and Grease (FOG)

Fats, oils, and grease (FOG) enter drain systems when Food Service Establishments prepare food and wash food equipment. FOGs solidify in the sewer, which can cause blockages in public drains, leading to flooding and expensive damage. Therefore, correct waste management practices are required for FOGs.
Commercial food businesses must have an FOG license*, and an installed grease trap to prevent FOG’s entering the wider sewer system. This EPA requirement is enforced by Galway City and County Councils, with fines for businesses who fail to comply.

What is a grease trap?

A grease trap is a device that collects FOGs from wastewater before it enters the main sewer. As waste builds up, grease traps need to be emptied and cleaned, to avoid expensive damage to the equipment. Furthermore, wider environmental damage can stem from an insufficiently maintained grease trap, as waste enters the public water system.

Grease Trap Emptying

Many Walsh Waste customers leave the grease trap maintenance to us with a regular emptying schedule. A regular schedule can eliminate the need for chemical dosing systems, resulting in substantial savings.
The frequency of the schedule is tailored to each customer, depending on the size and usage of the grease trap. Generally, however, it should be emptied every quarter.
Alternatively, we can do on-call trips when you know you are due a grease trap service. Just give our team a call.
Each service includes:

  • Grease trap fully emptied.
  • Power washing of grease trap.
  • Disposal of grease to an EPA licensed facility.
  • Photograph taken after emptying and cleaning.
  • Certificate of disposal for Local Authority inspections.
